Here's an article from one of our rescue partners, Harvest Home Animal Sanctuary, that addresses the topic of squab.  For those of you who haven't had the pleasure of meeting a "squab", they are incredibly sweet, innocent and vulnerable little beings.  I've attached a picture of MickaCoo-rescued squab Butters who wound up as a stray at SFACC in Jan 2010.  (He's all grown up into a big man bird now and adopted.) I'd say eating squab is very much like eating a puppy.  Pass it on.
